Easter Bunny Paw Print Cookies
Easter themed thumbprint cookies, filled with chocolate ganache and topped with sprinkles.
INGREDIENTS
Butter 80g
Golden Light Brown Sugar 250g
Vanilla Essence 1 teaspoon
Eggs 2 large
Cake Flour 350g
Baking Powder 2 teaspoons
Dark Chocolate 220g
Cream 180ml
Butter 2 tablespoons
Sprinkles to decorate
METHOD
Cream the butter, sugar and vanilla essence in a bowl. Add the eggs one at a time, beating until light. Sift in the flour and baking powder and mix together until a dough forms.
Working with lightly floured hands roll one large ball (approximately 15g) and three small balls (approximately 3g each) to form the Easter Bunny paw print, place the balls of dough close together and press down in the centre of each ball to form small indents in the dough. Place the paw prints well spaced on a baking tray lined with baking paper.
Bake at 180˚C for 15-20 minutes, keeping an eye on them so they don’t burn. Remove from the oven and press down gently in the indents again, and allow to cool.
Chop the dark chocolate evenly and place in a bowl. Heat the cream and butter until it is just about to bowl then pour over the chopped chocolate and stir until the chocolate has completely melted and the ganache is smooth. Allow to cool until it thickens, then carefully spoon into the indents on the paw print biscuits, top with sprinkles and enjoy.
