Rocky Road Ice Cream

Loaded Rocky Road Ice Cream. Chocolate ice cream loaded with mini marshmallows, flaked almonds and chocolate chips. Made using only six ingredients.

INGREDIENTS

Fresh Cream 500ml
Dark Chocolate 250g
Condensed Milk 1 tin
Mini Marshmallows 50g
Flaked Almonds 50g
Chocolate Chips 50g

METHOD

Chop the chocolate into small even pieces and place in a bowl. Heat 250ml of the cream until it is just about to boil then pour over the chocolate and stir well until the chocolate has melted and combined with the cream, set aside. In a clean bowl beat the remaining 250ml cream until thick, add in the condensed milk and melted chocolate and mix well. Churn in an ice cream machine* for approximately 20 minutes. Spoon the chocolate ice cream into a container add the mini marshmallows, flaked almonds and chocolate chips and stir in well. Seal the container with a lid and place in the deep freeze for a couple of hours to firm up.

*If you don’t have an ice cream machine, pour into a sealed container and stir well every half hour for about 2 hours. Then add the mini marshmallows, flaked almonds and chocolate chips and allow to freeze for at least another 2 hours.
