Shortbread for a short month.
INGREDIENTS
Cake Flour 225g
Corn Flour 225g
Castor Sugar 110g
Butter 250g
METHOD
Sift cake flour, corn flour and castor sugar into a bowl and rub in the butter with your fingertips. Once a dough has formed, roll out to a thickness of 6mm and cut shapes with a cookie cutter. Lightly prick the tops of the dough with a skewer and place on a lined baking tray.
Bake at 160°C for 20 minutes.
Allow to cool and dust generously with castor sugar.
