Oat & Nut Crunchies
Healthy, oat and nut crunchies, with a floral decoration.
INGREDIENTS
Cake Flour 2 cups
Brown Sugar 1 cup
Baking Powder 2 teaspoons
Bi-Carbonate of Soda 1 teaspoon
Butter 360g
Golden Syrup 2 tablespoons
Rolled Oats 2 cups
Desiccated Coconut 2 cups
Montagu Hazelnuts 75g
Montagu Almonds 75g
Montagu Cashew Nuts 75g
Montagu Mixed Dried Fruit to decorate
METHOD
Chop the hazelnuts, almonds and cashew nuts and add to the dry ingredients. Melt butter in a saucepan together with the syrup. Add to the dry ingredients and mix well. Press tablespoons of mixture onto a lined baking tray, use a circle cutter as a guide to keep the crunchies round. Decorate with the mixed dried fruit and nuts.
Bake at 180˚C for 10 minutes, reduce the heat to 160˚C for another 10 minutes, then turn the oven off for the last 5 minutes.
Allow to cool and enjoy!
