Mother’s Day Breakfast
Spoil mom with a special Mother’s Day breakfast.
INGREDIENTS
Butter 2 tablespoons
Milk 2 tablespoons
Water 2 tablespoons
Sugar 2 tablespoons
Egg 1 large
Cake Flour 3 heaped tablespoons
Baking Powder 2 teaspoons
Mascarpone to taste
Raspberries to taste
Honey 4 tablespoons
Pistachios 2 tablespoons
Almonds 2 tablespoons
Hazelnuts 2 tablespoons
METHOD
Put the butter, milk and water in a saucepan and bring to the boil. Beat the egg and sugar, add in the boiled mixture and the flour, and keep beating until smooth. Add the baking powder and mix with a spoon. Place the mixture in a squeeze bottle and create letters on a hot frying pan, greased with a little bit of butter. Fry each side until golden.
Heat the honey until it just starts bubbling then add in the roughly chopped nuts and spoon over the crumpets. Serve with raspberries and dollops of mascarpone.
