MAY-caroons
Macaroons, coconut cookies, for May and an easy and delicious treat for Mother’s Day using only five ingredients. Baked with Natura Sugars Golden Caster Sugar.
INGREDIENTS
Egg Whites 2 large
Natura Sugars Golden Caster Sugar 100g
Desiccated Coconut 150g
Vanilla Essence 1 teaspoon
Smooth Apricot Jam 50g
METHOD
Beat the egg whites in a bowl until they form soft peaks. While still beating, add the vanilla essence and the Natura Sugars Golden Caster Sugar, one tablespoon at a time, until stiff peaks form. Gently fold in the coconut until well combined.
Place teaspoons of the mixture, approximately 10g each, on a tray lined with baking paper.
Bake at 180˚C for 10 minutes, keeping an eye on them so they don’t burn.
Place the smooth apricot jam in a small bowl and mix with a spoon until liquified. Remove the macaroons from the oven and gently dab the jam over them with a pastry brush. Return the macaroons to the oven for a further 5 minutes, then remove them from the oven and allow to cool.
