I Scream
Chocolate ice cream popsicles enrobed in white chocolate ghosts.
INGREDIENTS
Fresh Cream 500ml
Dark Chocolate 250g
Condensed Milk 1 tin
White Chocolate for coating
METHOD
Chop the chocolate into small even pieces and place in a bowl. Heat 250ml of the cream until it is just about to boil then pour over the chocolate and stir well until the chocolate has melted and combined with the cream, set aside. In a clean bowl beat the remaining 250ml cream until thick, add in the condensed milk and melted chocolate and mix well.
Spoon into ice cream popsicle moulds making sure you don’t have any air pockets, insert the popsicle stick and place in the deep freeze for a couple of hours to set.
Once the chocolate ice cream popsicles have set, melt the white chocolate and coat the ice cream, I used a small offset spatula for this, place back in the deep freeze to harden the chocolate.
