Hot Cross Cinnamon Buns

Delicious and soft cinnamon buns, filled with butter, cinnamon and sugar and iced with crosses to give them a hot cross bun look.

INGREDIENTS

White Bread Flour 500g
Salt 1 teaspoon
Sugar 2 teaspoons
Dried Yeast 10g
Milk 250ml
Melted Butter 150ml

Butter 150g
Sugar 150g
Ground Cinnamon 1½ tablespoons

Icing Sugar 200g
Boiling Water 2 tablespoons

METHOD

Place flour, salt, sugar and yeast in a bowl, keeping the yeast on the opposite side to the salt. Mix together and make a well in the middle, pour in the milk and melted butter and mix until a dough forms. Remove from the bowl and knead well for 10 minutes on a lightly floured surface. Form a ball, and place in a lightly oiled bowl, cover with cling wrap and leave in a warm spot to rise for 90 minutes.

On a lightly floured surface, roll out the dough into a rectangle about 450mm x 300mm. Mix the softened butter, sugar and cinnamon in a bowl, then spread evenly over the dough. Roll up from the narrow end, and cut into 12 even slices. Place four rows of three slices in a baking tray lined with baking paper. Cover with cling wrap and leave to rise for 45 minutes.

Bake at 180°C for 25-30 minutes.

Remove from the oven and allow to cool. Mix the icing sugar with the boiling water and pipe crosses over the buns.
