Custard Slices
These custard slices are made with Tennis biscuits, instead of puff pastry, layered with custard, topped with icing and drizzled with milk chocolate.
INGREDIENTS
Milk 300ml
Butter 30g
Vanilla Essence 1/2 teaspoon
Egg Yolks 4
Castor Sugar 75g
Corn Flour 30g
Tennis Biscuits 24
Icing Sugar 250ml
Boiling Water 25ml
Milk Chocolate 50g
METHOD
Start by making the custard. Place 250ml of the milk in a pot together with the butter and vanilla essence and place on a high heat until it just starts to boil. In a bowl mix together the remaining milk, egg yolks, castor sugar and corn flour, then pour through a sieve into a clean bowl. When the milk is hot, pour half into the egg mixture, mix well, then pour it back into the pot with the remaining milk. Reduce the heat to medium and keep stirring until the custard is nice and thick. Pour into a clean bowl and cover with plastic wrap then allow the custard to cool completely.
Make the icing by mixing together the icing sugar and the boiling water. Spread the icing over 8 of the Tennis biscuits. Once the icing has set, melt the chocolate and drizzle over the top of the iced biscuits.
Spoon the custard into a piping bag and pipe onto the remaining Tennis biscuits. To assemble, place two custard covered biscuits on top of each other and top with an iced biscuit.
