Chilli Bites
Finely sliced onion in a spicy batter, deep-fried until golden and crispy.
INGREDIENTS
Chickpea Flour 100g
Cake Flour 50g
Baking Powder 2 teaspoons
Turmeric 1 teaspoon
Chilli Powder 1 teaspoon*
Ground Coriander 2 teaspoons
Ground Cumin 2 teaspoons
Ground Fennel Seeds 1 teaspoon
Sea Salt 1 teaspoon
Water 175-200ml
Fresh Coriander handful
Onion 1 large
Sunflower Oil for deep frying
METHOD
*You can add another teaspoon of chilli powder, or a finely sliced fresh chilli, if you’d like the chilli bites to have more of a kick. The above spice mix is more flavourful than hot.
Place all the dry ingredients in a bowl and whisk together with the water, adding it gradually, until you get a smooth paste. Peel, quarter and finely slice the onion and add it to the mixture with the chopped coriander and mix well. Heat the oil to 180˚C and carefully drop teaspoons of the mixture into the hot oil, fry for a few minutes until golden, make sure to turn the chilli bites in the oil so they cook evenly. Remove from the oil and dab with some paper towel and enjoy.
