Biltong & Cheese Crackers
Light and crispy, biltong and cheese crackers.
INGREDIENTS
Biltong 50g
Cake Flour 120g
Smoked Paprika 1/4 teaspoon
Chilli Powder 1/4 teaspoon
Sea Salt 1/2 teaspoon, plus extra for finishing
Cheddar Cheese 150g, grated
Butter 75g
METHOD
Roughly chop the biltong, place in a food processor and pulse a couple of times. Add in the flour, smoked paprika, chilli powder and sea salt and pulse to give it a good mix. Grate the cheddar cheese and add it to the food processor with the softened butter and pulse until a dough forms.
Roll out the dough to approximately 2mm thick and cut into shapes with a small cookie cutter. Use a toothpick to press into the cut shapes to prevent puffing when baking. Place the crackers on a lined baking tray and bake at 180˚C for 7 to 8 minutes. Remove from the oven and allow to cool completely then sprinkle with sea salt.
