Almond Shortbread Balls

Delicious, melt-in-your-mouth shortbread cookies.

INGREDIENTS

Butter, softened 250g
Icing Sugar, plus extra for dusting 100g
Almonds, chopped 100g
Cake Flour 375g

METHOD

Beat butter and icing sugar together in a bowl until pale and creamy. Add the almonds and sift in the flour and mix together until just combined. Roll teaspoons of the mixture into balls and place on a lined baking tray.

Bake at 180˚C for 15-20 minutes.

Allow to cool for 5 minutes then dust generously with icing sugar.
