Peppermint Crisp Tart

A South African classic, layers of Tennis biscuits with caramel, cream and Peppermint Crisp.

INGREDIENTS

Cream 250ml
Caramel Treat 1 tin
Tennis Biscuits 200g
Peppermint Crisp 2 slabs

METHOD

In a bowl beat the cream until stiff peaks form. In a separate bowl beat the Caramel Treat until smooth, then add to the cream and gently mix together. Grate the Peppermint Crisp slabs, adding half to the caramel and cream then mix well. In a square tart dish, place a layer of Tennis biscuits along the bottom, then spoon over the creamy mixture. Repeat this step once more then top with the remaining Peppermint Crisp. Place in the fridge for an hour or two to set.
