Mini Hertzoggies

Mini Hertzog cookies for Heritage Month made using only 5 ingredients.

INGREDIENTS

Egg Whites 3
Sugar 170g
Desiccated Coconut 150g
Apricot Jam 1 tin
Mini Marie Biscuits 4 packs

METHOD

Beat the egg whites adding sugar gradually until thick and glossy. Mix in the coconut and place into a piping bag. Spoon a drop of apricot jam onto the mini Marie biscuit then pipe the coconut meringue mixture over the top.

Bake at 180˚C for 10-12 minutes.
