Lemon Curd

Quick, easy and silky smooth lemon curd, great for tart fillings.

INGREDIENTS

Lemon Juice 125ml
Eggs 2 large
Butter 100g
Castor Sugar 250ml

METHOD

Mix all of the ingredients together and pour into a saucepan. Slowly bring to the boil and thicken for approximately 5 minutes. Strain into a clean bowl and cover with cling film touching the surface of the hot lemon curd and allow to cool.
