Peanut Butter and Jelly Linzer Cookies. These thin, crisp, three ingredient peanut butter cookies are sandwiched together with strawberry jam and dusted with icing sugar. Baked with Natura Sugars Golden Light Brown Sugar and dusted with Natura Sugars Demerara Icing Sugar.
INGREDIENTS
Natura Sugars Golden Light Brown Sugar 1 cup
Smooth Peanut Butter 1 cup
Egg 1 large
Smooth Strawberry Jam for filling
Natura Sugars Demerara Icing Sugar for dusting
METHOD
Place the Natura Sugars Golden Light Brown Sugar, peanut butter and egg in a bowl and mix until a dough has formed.
Roll out the dough to a thickness of approximately 2mm between two sheets of plastic wrap.
Using a circlular cookie cutter, cut 55mm diameter circles out of the dough. For half of the cookies cut a 25mm diameter circle out of the centre of the cookies, these will be the tops. Carefully place the cut dough on a sheet of baking paper and place on a baking tray.
Bake at 180°C for 5 minutes.
Remove from the oven and allow to cool completely.
Dust the top cookies generously with icing sugar and spread the base cookies with strawberry jam. Carefully holding the edges of the top cookies, place them on the strawberry jam covered base cookies.
