Strawberry Pavlova to kick off 2020. Food typography for my ATE 2020 recipe calendar.
INGREDIENTS
Egg Whites 4 large
Castor Sugar 1 cup
Vanilla Essence 1 teaspoon
Brown Vinegar 1 teaspoon
Strawberries 250g
Castor Sugar 4 tablespoons
Cream 250ml
METHOD
Beat egg whites, adding sugar a third at a time, until stiff and glossy. Add vanilla essence and brown vinegar and beat in well. Place the mixture in the centre of a lined baking tray and fluff the edges into peaks.
Bake at 120°C for 30 minutes, reduce the heat to 100°C for another 30 minutes and then reduce the heat again to 80°C for the final 30 minutes. Turn the oven off and allow to cool in the oven.
Chop half of the strawberries and roughly mash together with the castor sugar. Cut the tops and quarter the remaining strawberries. Whip the cream until stiff and spoon onto the cooled pavlova, top with the roughly mashed and quartered strawberries.
