Bunny Chow Pull Apart Bread
This Bunny Chow inspired pull apart bread is filled with leftover chicken curry, cheddar cheese and a drizzle of chutney.
INGREDIENTS
White Bread Flour 500g
Salt 1 teaspoon
Sugar 2 teaspoons
Dried Yeast 5g
Water 250ml
Olive Oil 50ml
Curry to taste
Cheddar Cheese to taste
Chutney to taste
METHOD
Place flour, salt, sugar and yeast in a bowl, keeping the yeast on the opposite side to the salt. Mix together and make a well in the middle, pour in the water and olive oil and mix until a dough forms. Remove from the bowl and knead well for 10 minutes on a lightly floured surface. Form a ball, and place in a lightly oiled bowl, cover with cling wrap and leave in a warm spot to rise for an hour.
On a lightly floured surface, roll out the dough roughly 5mm thick into a rectangle about 550mm x 300mm. Add a generous layer of room temperature curry*, a drizzling of chutney and then top with grated cheddar cheese. Roll up from the narrow end, and cut into 12 even slices. Place four rows of three slices in a baking tray lined with baking paper. Cover with cling wrap and leave to rise for 30 minutes.
Bake at 180°C for 30 minutes.
*You can use any leftover curry, but try to use the thicker part of the sauce and not too much of the oily/watery part of the sauce. It is also better to break down any meat and vegetables into smaller pieces and distribute them evenly across the dough before rolling it up.
