Bow Ties

Deep fried pastry dunked in a delicious syrup.

INGREDIENTS - SYRUP

Sugar 400g
Water 180ml
Golden Syrup 30ml
Lemon Juice 15ml

METHOD - SYRUP

Dissolve the sugar, water, golden syrup and lemon juice in a pot and bring to the boil. Simmer for about 10 minutes and then set aside.

INGREDIENTS - PASTRY

Cake Flour 150g
Baking Powder 2ml
Salt Pinch
Butter 15ml
Egg 1
Water as required
Sunflower Oil for deep frying

METHOD - PASTRY

Sift the flour, baking powder and salt together and rub in the butter. Add in egg and a little water and knead until smooth. Roll out the dough on a floured surface until about 1.5mm thick.

Cut into 10cm x 5cm rectangles. In the centre cut a 3cm slit legthwise and 1cm above and below it cut a 2cm slit lengthwise. Pull the one side through the centre slit and then back out to form a bow tie shape. Heat the oil in a pot and deep fry until golden on both sides. Remove with a slotted spoon and dip in the warm syrup. Remove and drain on a cooling rack.
