Beach Snowman

Peanut Butter and Biscuit Truffles.

A stack of peanut butter truffles with Nuttikrust® and Eet-Sum-Mor® biscuit pieces, rolled in Nuttikrust® and Eet-Sum-Mor® crumbs, decorated to look like a summer, beach version of a snowman.

INGREDIENTS

Butter 50g
Icing Sugar 125g
Peanut Butter 125g
BAKERS® Nuttikrust® 10
BAKERS® Eet-Sum-Mor® 8
White Baking Chocolate to decorate
Food Colouring Powder to decorate

METHOD

Place the softened butter and icing sugar in a bowl and beat until light and creamy, then add in the peanut butter and continue beating for a couple of minutes. Roughly chop up half the BAKERS® Nuttikrust® and BAKERS® Eet-Sum-Mor® biscuits and mix them in well.

To make the beach snowman roll out two sets of three different sized balls. To make individual truffles roll out balls all the same size. Place in the fridge for a couple of hours to firm up.

Blitz the remaining biscuits to create a fine crumb. Remove the truffles from the fridge and roll them through the biscuit crumbs.

For the beach snowman, stack the three different sized truffles on top of each other and decorate.
