Banana Bread

Classic banana bread.

INGREDIENTS

Butter 125g
Brown Sugar 1 cup
Vanilla Essence 1 teaspoon
Eggs 2 large
Cake Flour 2 cups
Baking Powder 1 teaspoon
Bananas 4 ripe

METHOD

Beat butter, sugar and vanilla essence until light. Add eggs one at a time, beating well after each. Sift in flour and baking powder, and fold into mixture. Mash the bananas, add to the mixture and mix in well. Place into a lined ring tin and generously sprinkle with extra brown sugar.

Bake at 180°C for 45 minutes.
